Oeufs en tomate



As we get into the middle of Summer, I Know How to Cook has become one of my very favorite cookbooks.  The vegetable and fruit sections are wonderful, providing excellent recipes centered on a specific fruit or vegetable.  I found this delightful recipe for oeufs en tomate (eggs in tomatoes) in the eggs section.  Erik isn't a huge fan of cooked tomatoes, but he said it was the best cooked tomato he has had thus far (hooray!)

We each had one tomato with sauteed spinach and mushrooms.  A really tasty meal!

  3. I Know How To Cook has been my bible these last couple weeks - I LOVE it, and this particular recipe is one of the best I've tried. I should make it again now that we have heirlooms in at the Co-op. ^_^

  4. Alexis this looks so yummy!! I am not a big hot tomato fan either, not even on pizza, but I think the combination with a nice hot egg sounds like heaven. I am going to give this a try! I was thinking of you today while I was blanching and freezing corn so we would have a little bit of summer in the middle of winter. :) Glad to see you are doing well and looking forward to reading about your adventures in Hawaii!!
